Dolce Con Ricotta

(Italian Ricotta Dessert)

Ingredients

-2 lbs. Ricotta

-1 tsp. Vanilla or almond extract

-1/2 Cup mini chocolate chips or shaved chocolate

-1 Cup minced candied fruit (optional)

-1 Tblsp. Grated orange rind

-3/4 Cup apricot or peach jam

-About 2 dozen lady finger

-1 ½ Cups Amaretto liqueur (or more if desired)

Procedure

Line a 9" by 14" cake pan with the lady fingers. Sprinkle with the Amaretto liqueur to soften a little. Mix together the ricotta, vanilla or almond extract, sugar, candied fruit, almonds, chocolate, and orange rind. Blend very well for several minutes. Spread the jam evenly over the lady fingers. Spread the ricotta mixture over the jam and lady fingers. Cover with more fingers if desired. Garnish with chocolate, Almonds, ect. Refrigerate overnight. Serve chilled.
