Spaghetti A La Carbonara

(Spaghetti Carbonara Style)

 

Ingredients

-1 lb. Spaghetti

-6 eggs

-3/4 Ib. bacon or prosciutto

-parmesan cheese

-fresh parsley, chopped

-olive oil

-black pepper

-salt

Procedure

Chop the bacon or the prosciutto. Cook bacon until golden but not crisp. If you think its too much grease you can remove some of the bacon grease at this point. Add a couple tablespoons or so of olive oil to enhance the flavor. Boil water for the spaghetti. Salt the water. Cook the spaghetti al dente. Drain. While the spaghetti is cooking beat six eggs in a bowl. Add parsley, salt and black pepper. Put spaghetti in the frying pan with the bacon. Add the beaten egg mixture and stir into the spaghetti until the egg coats the spaghetti and begins to cook. Serve with lots of parmesan cheese and more black pepper and fresh parsley if desired.
