2 ½ lbs. potatoes (peeled & boiled & mashed)
5 eggs (med.)
1 ½ table spoons yeast
¼ cup luck warm milk (to dissolve the yeast in)
¼ cup sugar
½ table spoon sugar
- cups flour (approx.)
Vegetable oil for frying
Combine:
In a large bowl mix together Reserve 2 cups of flour and add until
dough becomes a ball. Cover with plastic and let rise for 1 ½ hours.
Preheat:
Oil to 360 degrees F
* Using a spoon drop the batter into the hot oil. Fry until golden
brown on both sides. Remove and drain on paper towels. Sprinkle/roll in
sugar.
